EPISODE 13: TROUT AND A RIDE AROUND JARUN
In the new episode of Ana Cooks, Zagreb Loves, Ana Ugarković brings you a new recipe – trout, and along the way, takes you for a stroll around Jarun!
Baked trout fillets with aromatic breadcrumbs (for 4 people) Ingredients:
- 1 teaspoon toasted coriander seeds, crushed in a mortar or spice grinder
- 1 teaspoon toasted cumin seeds, crushed in a mortar or spice grinder
- 2 teaspoons grated lemon zest, plus lemon wedges for serving
- 1 small fresh hot chili, finely chopped
- salt and black pepper
- 1 cup panko breadcrumbs or coarse dried breadcrumbs made from stale bread
- 4 tablespoons olive oil
- 4 trout fillets, about 150 to 170 g each, or 2 whole trout, butterflied
Preparation:
1. Preheat the oven to 210°C.
2. In a bowl, combine the coriander and cumin seeds, chili, lemon zest, a little salt and a few grinds of black pepper.
3. Add the breadcrumbs and olive oil and mix well.
4. Season the trout fillets with salt and arrange them skin side down on a baking tray lined with parchment paper and drizzled with olive oil.
5. Spread the breadcrumb mixture evenly over the trout fillets.
6. Bake until the fish is opaque and the breadcrumbs are golden brown, about 8 to 10 minutes.
