EPIZODA 11: ESPLANADE ŠTRUKLI
In the latest episode of Ana Cooks, Zagreb Loves, chef Ana Ugarković visits the iconic Esplanade Zagreb Hotel, shares the story behind one of Zagreb's most beloved traditional dishes, and prepares delicious homemade štrukli.
Štrukli
(for 4 people)
Dough:
- 500 g of all-purpose flour
- Salt
- 1 egg
- 5 dl of oil
- 3 dl of water
Filling:
- 600 g of fresh cow cheese
- 3 eggs
- Salt
- Butter for coating
- 500 ml of sweet or homemade sour cream
Mix the flour, egg, salt and oil into a medium soft, smooth dough. Place the dough in a bowl, cover it with a plastic wrap and let it rest for at least 2 hours. After that, carefully stretch the dough with your hands, very thinly on a tablecloth sprinkled with some flour. Cut off the thicker edges of the dough at the ends with scissors.
Prepare the cheese filling by mixing three eggs and salt well with cheese. Spread it on the bottom part of the stretched dough to a width of 20 cm. Then roll up the dough using the tablecloth - start from the cheese towards the end of the dough. Cut the rolled dough with the edge of a thin saucer into pieces about 8 cm in size.
Place the cut štrukli in a pot of boiling water and cook them for two minutes. Take out the cooked štrukli with a perforated spoon and put them in a refractory ceramic dish that you have previously coated with butter. Pour the sweet cream over them and place them in the oven preheated to 180°C. Bake for 30-40 minutes, until they get a nice golden color. Serve the štrukli with a bit of the sauce in which they were baked.
